If I were to do the entire TAT, sticking to the blues, I'd probably go for a DR650, 650L, or 690/701. If you can stand the lower power, WR250R would be on the list, too. All will handle the blue trails out west just fine, and all will be much better choices for the easier, more wide-open, and more pavement sections in the east.
